deb - not sure if this will help your situation any or not - but my sister was telling me about adding benefiber or fibersure to baked goods to lower the glycemic index. we were talking about the banana bread i am going to have for my uncle when they come to visit - he LOVES banana bread and has diabetes, but he's got his under control with exercise and watching his diet. as long as he doesn't overdo, he can have SOME occasional sweets and breads - which is why the conversation on the added fiber. she said to add 1 tsp. per cup of flour in my bread recipe. don't know how that would translate for pies, but it might be worth looking into. and grace said adding the fibersure (i think that's the brand she buys) is virtually undetectable as far as taste goes.

I always cook the pumkin whole... and when its done you just stick a sharp knife in and if it goes in easy its done. then let it cool and scrape out the seeds and strings. Scrape out the pumpkin plup and put it through a mill to make it creamy.
Then just use 2-3 eggs, spices, and one can of cond. milk...
Bake like you would with the can pumpkin mix and enjoy....
I have been making pumpkin pies like this for ever...
I always use pumpkin pie pumpkins. There is a big difference...

Don't you punch a hole or anything to let the steam release?

I have baked mine cut in half before flat side down on the pan and have seen where they cut the top off and remove the guts then put the cap back on, that was the way I wanted to try my next one so you have given me another new way?

Does anyone bake the pumpkin seeds to eat?

No never do. I want the steam to cook the inside and I have never had one blow up either. You want all the juices to cook the plup.
And pumpkin seeds are a must for my family. I cooked up some last night.
Rinsed them well and put on cookie sheet. Add alittle butter flavor oil and sprinkle some ranch dressing mix ( dry ) on them and put the oven on 200 degrees for about 3 hours.. yum are they good.

Good ideas for the pumpkins. We usually grow pie pumpkins, but didn't do it this year. Dh found a sale on canned stuff, so that's what I am using this year.

Deb, there is stuff like Spenda out there, that is sugar stuff for diabetics. You can cook/bake with it. So your hubby can still enjoy a pie now and then.

I just tried this Potato soup recipe last week and it was a big hit with Hubby and I.

Leek Potato Soup

1 pound leeks, cleaned and dark green section removed, approx. 4 - 5 medium leeks
3 T. unsalted butter
Heavy pinch Kosher salt
14 oz., or approx. 3 small Yukon gold potatoes, peeled and diced small
1 Qt. vegetable broth
1 cup heavy creme
1 cup buttermilk
1/2 t. white pepper
1 T snipped chives

Chop the leeks into small pieces.

In a large soup pot over medium heat, melt the butter. Add the leeks and a heavy pinch of salt and cook for 5 minutes.

Decrease the heat to medium - low and cook until the leeks are tender, stirring occasionally. (About 20 - 25 minutes)

Add the potatoes and the broth, increase the heat to medium - high and bring to a boil. Reduce the heat to low, cover, and gently simmer until the potatoes are soft, approximately 45 minutes.

Turn off the heat and puree the mixture with an immersion blender until smooth. Or you can pour it into your regular blender which is what I did.

Stir in heavy cream, buttermilk, and white pepper. Taste and adjust seasoning if desired. Sprinkle with chives and serve. Can be chilled and served cold if desired.

Makes 6 servings and is wonderful served with some hot toasted french bread.

That sounds like it would just hit the spot today, too! Potato soup is one of my comfort foods, and made with Yukon Golds-their flavor is so wonderful!

May have to run to the store for some leeks.
