And here is one for pumpkin bread I have been promising to post for Jacqui. Just the smell of it baking is worth it!

3 1/3 cups flour
3 cups sugar
2 teaspoons baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon salt

2 cups canned pumpkin
4 eggs
1 cup vegetable oil
2/3 cup water
1 teaspoon vanilla
1/2 cup pecans
1 cup raisens
(raisens and pecans are optional, but the raisens really add to it)

Mix first 6 dry ingredients. Make a well in the bowl, add pumkin, eggs, oil and water. Mix until smooth. Add nuts, raisens and vanilla. Pour into 3 greased loaf pans. Bake at 350 degrees for 1 hour. Done when punch on top bounces back.


Use plenty of grease in the pans but no flour.
Dump from pans as soon as they are out of the oven and wrap in foil. I immediatly freeze them to keep them moist. You can slice it and serve it plain or mix some cream cheese and powdered sugar to spread on it. Yum! Yum!

Ladies - all these recipes sound so scrummy but you're not being fair - since being diagnosed with diabetes I cannot have any of these treats! Frown Frown Frown

I'm sorry Milica Frown There are lots of sugar substitutes out there, you should give one a try sometime. And then maybe you can have just alittle bit.

It's alright - I love looking at all the different recipes. I can still make them for the family even if I can't eat them myself.

Milica, since I'm one of the guilty ones posting, I went looking for recipes for diabetics. This is the first one I found - it's a low-carb site, but apparently many of the recipes are good for diabetics, too. Take a look round, you (and others dealing with diabetes/weight-loss etc) may find some new yummies to make and eat.

I likely won't be baking much, and am trying hard not to eat much sugar, but it's not easy. I've thought of not having goodies in the house, but am thinking of trying something else. I hope you all can find something. Smile

I thought Deb had started a recipe thread for diabetics, maybe some who do diabetic cooking could post some dessert-type/holiday recipes there. It's no fun not being able to participate.

Oh, Meg, I'd forgotten about that. Guess I'd better copy these there (though it wouldn't hurt if everyone ate the way diabetics should, don'tcha think?) Not always easy to do, though, then again, if everything was easy, life would be boring! Big Grin
