Thanks for the recipe, Betty! It is different from our Dutch version.

Jan Hagel Cookies (translates to John Hail - Smile)

1 cup butter or margerine, softened
1 cup white granulated sugar
1 tsp cinnamon
1 egg yolk
2 cups all purpose flour
1/4 tsp. salt

1 egg white
water

topping - white sugar, 1/2 tsp cinnamon, 1/2 cup finely chopped nuts (generally peanuts are used)

Cream butter/margerine; add sugar gradually, beating until fluffy. Add egg yolk and beat well.
Blend flour and salt; add in fourths to creamed mixture, mixing until blended after each addition.
Spread dough on an UNgreased cookie sheet all the way to the edges. Beat egg white slightly with a small amount of water; brush lightly over the dough surface. Mix some sugar (about 2 tablespoons, I think) with cinnamon and nuts. Sprinkle over the top.

Bake at 375F for 15 minutes. cut into bars while still warm. Take out of cookie sheet carefully. These are quite crumbly, so you will want to eat them over a plate. Very yummy - I remember these from childhood! Makes about 4 dozen cookies.
(I don't think the container needs to be airtight).

Anyone have a good recipe for making CANNED sweet pickle relish? I have LOADS of cucs coming in and thought I would try relish this year instead of just freezer pickles.

How about this one:

Sweet Pickle Relish

5 cup ground cucumbers
3 cup ground onion
3 cup ground celery
2 x green bell peppers ground
2 x hot peppers (red cayenne) ground
3/4 cup salt dissolved in
1 1/2 qt water

PICKLING MIXTURE
1 qt vinegar
3 cup sugar
2 tsp mustard seed
2 tbl celery seed


Method:
Run the cucumbers, onions, and celery through a food grinder and measure. Run the bell peppers and hot peppers through the grinder together. Mix all the vegetables together and let them stand overnight in the salt water. Drain well.

Combine pickling mixture ingredients in a kettle. Bring to a boil. Add the drained vegetables, and bring back to a boil. Simmer ten minutes. Seal in hot sterile jars.

It's great on hot dogs or hamburgers!!

Nola - Just wanted to let you know the relish turned out delish! I added a bit more sugar ...Al likes his pretty sweet so I did 4 cups of sugar but other than that I kept it the same.... VERY TASTY!

I'm so glad the relish turned out good! I need to make a fresh supply - last year's is all used up, and I do like it on hot dogs, or on a good burger! And with our own nice lean hamburger, we grill or cook over the firepit often!
