Homemade Chicken Nuggets:
I use white meat, but you could cut the dark meat off the bones if you like too. Using breasts are so easy though. The amount of stuff will vary, depending on the amount of chicken you have cut up. So, cut up some chicken meat into nugget sized pieces or even strips. I marinate mine in onion powder, garlic powder and soy sauce for about 15 minutes. (sorry, I dont' measure here, just sprinkle on) Mix together 1 cup flour with 1 cup cornmeal (I use whole wheat flour but any will work). Mix in 1 Tbls cornstarch, and some salt and pepper. (you may need to double this if you have lots of chicken) Dip chicken pieces into eggs that have been beaten (2 usually is enough). Then dip into flour mixture and fry in enough hot grease to cover them. You could probably bake these too, but I've never tried it. Enjoy! Dorian |

well as VP of the BC Procrastinators Society, i can truthfully say that i have uphelp the requirements of my executive position -
meg, FINALLY here is my chess pie recipe!! better late than never!! lol LYONS CHESS PIE from Jessie "Ma" Barlow 2 eggs 1 1/2 c sugar 1/2 c melted butter 1/2 c evaporated milk 1 pinch salt 2 teaspoons flour 2 teaspoons cornmeal 1/2 teaspoon vanilla nutmeg, for sprinkling - to taste 1 pie shell (original recipe calls for "deep dish" - i use a regular one tho) mix all ingredients except nutmeg. pour into prepared pie shell (again, original recipe says this, all i do to prepare the pie shell is thaw it! lol PUMPKIN CAKE by Mildred Harmon mix together in bowl: 2 c sugar 1 1/4 c veg. oil 2 eggs 1 can pumpkin (or equivalent of fresh, cooked pumpkin - i am sure original recipe said exactly how much, but i don't have that info now) sift together: 2 1/4 c plain flour 1 teaspoon baking soda 2 teaspoons baking powder 1 teaspoon salt 2 teaspoons cinnamon 2 teaspoons allspice 2 teaspoons cloves combine both mixtures. pour into greased tube pan. bake at 350F for an hour. i made this dessert today - haven't in quite a while. it is SO easy and SOOOOO good - of course, how can you go wrong with chocolate? CHOCOLATE COBBLER sift together: 3/4 c sugar 1 c plain flour 1/4 teaspoon salt 2 teaspoons baking powder 2 TABLEspoons cocoa stir in: 1/2 c milk 3 tablespoons melted butter 1 teaspoon vanilla 1/2 chopped nuts (optional) spread batter evenly in 9-inch baking pan. than mix together: 1/2 sugar 1/2 c brown sugar 1/4 c cocoa sprinkle over batter. pour 1 1/2 c water (i use warm tap water - does not have to be boiling water) over all this. bake at 350F for 45 minutes. fantastic served warm with ice cream or whipped topping - still good when served cold!! love & hugs, beechnut (cindy) a/k/a Miss Tassels "She shops around for the best yarns and cottons, and enjoys knitting and sewing." CINNAMON ROLLS 1 cup melted butter 1/2 cup sugar 3 eggs, beaten 1 tsp salt 2 Tbls yeast, dissolved in 1 cup warm water with 1 tsp sugar in it. 2 Tbls lemon juice 6 cups flour (all white, all wheat or half/half it tastes great anyway) Dissolve your yeast in the water and sugar. Mix butter, eggs, sugar and lemon juice in your mixer. Add the yeast mixture. Add 3 cups of flour and salt, let beat on low for 10 minutes. Add rest of the flour. Roll into a rectangle and brush with 2 tsp melted butter. Mix together 3/4 cup brown sugar with 4 tsp cinnamon. Sprinkle this mixture on the dough. Roll up, cut into 12 pieces and put on cookie sheet, not touching each other, but almost. Let rise for about 40 minutes, until doubled. Bake at 250 for about 20 minutes. Mix together some powder sugar and milk for a glaze. Enjoy! Dorian |

Another cold and rainy day here in Michigan- we are under a flash flood alert now. Perfect weather for baking chocolate cobbler! LOL Think I will try it for dinner tonight. Bet my dad would have loved it. His motto was, If it isn't chocolate, it isn't dessert! LOL Thank you also for the chess pie- it sounds very similair to my MIL's recipe, which I don't have. The pumpkin cake has to pass muster of DS2, our house's self-appointed pumpkin czar. Dorian, the cinnamon rolls sound yummy. Actually, it is supposed to rain here all week. If we don't get washed away first, sounds like I may just be baking all week! Oh I know what I wanted to post. Someone mention pork chops a few days ago. Here's how I do mine. PORK CHOPS 1 Tbls minced scallions 1/2 Tbls ginger 1/2 Tbls chopped garlic 1 c chicken broth 1 tsp cayenne pepper 2 Tbls soy sauce 3 Tbls oil 1 Tbls cornstarch, dissolved in about a Tbls of water, just enough to dissolve the cornstarch. Heat oil in pan, sautee scallions and garlic, add chops and brown on both sides. Add the rest the ingredients, and simmer till done. This makes a very yummy sauce that I pour over the chops and maybe some noodles. Enjoy! Dorian |

Summer Squash Casserole
I pick my summer squash and zucchini when they are are between 5 & 8" long and about as big around as a banana. When they get too big, when the skin turns dull, I think the flesh is pithy. For this recipe I used about 7 or 8, maybe 9 squash, a combination of summer squash and zucchini. The recipe calls for 2 lbs. Wash them, cut off ends, and slice fairly thin. Slice a medium sized onion, and grate 1 or 2 carrots (depending on how much you like carrots and how big they are). Add 1 can cream of chicken soup, 1 C sour cream (I added an extra 1/2 C because I had so much squash and I don't like the casserole to be too dry), 1 t basil, and 1&1/2 C of dry stuffing mix (I use Pepperidge Farms Sage and Onion- uses both white and whole wheat bread). Mix all together and spread into greased 9x12" baking dish. Bake at 350 for 25-30 minutes. Dorian, I have a cast iron pan that I call a half-dutch oven. It is a skillet with very deep sides. I sprayed it with Pam and spread my sqaush mixture in it. Baked it on the top shelf of the grill while the chicken was cooking. It was wonderful! How do I know it was wonderful? My DH went back and had seconds, and this is the guy who thinks he doesn't like sour cream! LOL He is such a finicky eater! I give him credit, though, he has come such along way from when I first met him. Back then, he didn't like salad, he didn't like soup, he didn't like pork, he couldn't bear to touch raw meat. You should have seen him trying to make hamburger patties!?! So now, when I make something that has stuff in it that he thinks he doesn't like, and he raves about it, I know I've done a good thing! Just thinking...is there anyway of making a catalogue out of all these recipes shared? It would be easier to find a dish if someone could just sort of update a glossary of sorts instead of paging through pages of thread.
Also, I just baked an Amish Friendship Bread today. I can post the recipe here if it has not yet been posted. It is fun and it turned out great! It is like a chain letter, except it is a chain "bread". meg - i need a good squash casserole recipe and yours sounds great too! our squash didn't do so well this year but perhaps i can get enough to do a "half" recipe. tata - i haven't had amish friendship bread in forever! will have to think about getting one started - as soon as cooler weather gets here! anyone got a good corn nugget recipe? i found one on the internet but it's not like the ones i've gotten in local stores. Cindy, what on earth is a corn nugget? Is that like a chicken nugget only made from corn kernels??
Man, those must be SOME regional dishes!!! The pork chops sound good, may have to try them someday, but i have to be careful, DH can only eat a small amount of pork at a time - he's allergic/sensitive.
