OOOOOHHHH Cindy! Can I come to your house for dinner tonight??? I've made that recipe - DD gave it to me - and it is delicious!! Trouble is, with only 3 of us for meals most times, I have to make two - in 8" dishes - one for now and one to freeze for later!

Hubby asked for smoked sausage and fried potatoes for lunch today. OK by me, but DS doesn't like it - so guess I'll have to thaw out some hamburger for him. Can make him a couple cheeseburgers and save the rest for his lunch tomorrow - or maybe brown it and use it for a taco salad for myself for lunch tomorrow.

That does sound like a quick and easy meal, Cindy. I make my own spaghetti sauce, but I can use it instead. I am always on the look out for casseroles. Monday night is difficult for us. DS2 is home from school late and there isn't time for DH to come home and eat before Hungarian class. A casserole I can put into a thermos and he can eat before class starts.

Nola, we just had potatoes and smoked sausage last week. DH got a smoker to go in the grill for Father's Day. He has become something of a pyromanic since then! LOL He bought some fresh kolbasz (the Hungarian equivilent of Polish kielbasa- different spices, less greasy) and smoked it himself. Everytime I opened the refrigerator it was like walking into a wonderful old-world butcher shop.

meg, i do make my own spaghetti sauce (i watch the sodium content of what i eat when i can!!) and yesterday i REALLY made my own spaghetti sauce using some of the last romas from the garden - it was absolutely delicioso!! we are planting roma tomatoes next summer on purpose! i plan on putting lots of tomatoes in the freezer for spaghetti, chili, soup, etc.

Jess is planning a Halloween party for Sammy Joe's birthday in a few weeks so we have been thinking of things to make the party special. And I saw the cutest thing on Food Network. You take an apple, peel it, and cut out rounds with a very small melon baller. Then spear the ball on the end of a small stick and dip it in caramel or candy to make the traditional candied apple easier to eat in miniature!

I tried some tonight and it was very easy, and they are so cute. A bit wasteful of the apple though. I think it would work very well with several different types of fruit too.

connie - instead of cutting balls from the apple, how about just cutting wedges and then go from there. less waste - you could spear the wedge in the middle of the wide wedge - it would look like a "smile" when you held it upright!

if you put penaut butter (for the glue) and mini marshmallows between the wedges, it looks like a smile (marshmallow teeth) my day care kids love this..and small baby carrots, with a pecan fingernail glued on with PB that would be spooky monster fingers....(don't know if you are doing "scary" or not) Big Grin

Hope someone can provide a solution to my dilemna. My girlfriend had a real boon with her zuchinni, she sent several home with me yesterday. I know there is a way to grate and freeze it to use later for bread, cookies or cake. Just can't remember how. Do I need to add lemon juice to it, like I do when I mash bananas to freeze for banana bread? Thanks for your help?

Correct me if I'm wrong, but the only purpose of lemon juice on cut fruit is so that they don't turn brown, is that correct? Or is there another purpose?

If that's the case, I don't see why you would need to put lemon juice on the zuchinni before you froze it. As you wont see it once it's cooked in stuff.

From what I've read in my books or online. You can either slice, blanch and then freeze, Or you can grate and freeze, without adding anything to it.

Okay, this is a silly question...I'm using fresh pumpkin in a pie. I did everything the mashed pumpkin recipe says, but the pumpkin is a little stringy in texture. Is this the way it's supposed to be???
