Gosh, my mom taught me to make strawberry pie that way way back in high school. My son has been pestering me to make one. We have had an awful lot of gradudations and birthdays, and he is "caked out!" I always brush the crust with a little egg white and bake for 5 minutes. That little baked glaze keeps the crust from getting soggy. I usually pour a little of the cooled gelatin mixture into shell, then fold the berries into the remaining gelatin and pour into the shell. If you haven't worked with cornstarch, be sure to blend with cool water to prevent lumps from forming. Your mixture will be cloudy before the boiling, then it turns clear as the starch cooks. It really does require constant stirring, so if you've got a kid who is old enough and is fascinated by science, this is the task for them! LOL Grandma is spot-on! This recipe is delicious!

Me, too, Pat, and what makes it worse, is that I am cross-stitching quilt panels for my sister. Wreaths of strawberries and blossoms, takes me 25 hours to do one wreath and there are at least 12 wreaths per panel, plus some other motifs. She is just crazy for strawberries, her favorite book when she was a girl was a Lois Lentz book called Strawberry Girl. I'd like to have it done in time for the fair, but I am still on the first panel, maybe next year.
