I like knowing what everyone is having for dinner, a lot of times I don't know myself, and it's nice to get ideas
I made a yummy meatloaf last night. Something I don't do very often. Had mashed potatoes, gravy and corn with it.
I am not sure what to make tonight, as the two older kids are going to be gone. I'll probably make fish for dh. Carson and I may just have something easy like hotdogs and fries.
Good Morning Dorian, For dinner last night we had Golden Baked Chicken, baked potato, salad and leftover Butternut Squash and Apple bake (plan to put that recipe in the recipe sight)Yummy!!!!
For tonight, either turkey meatballs or turkey burgers. That is as far as I got on that one.
We love meatloaf here in this household too. I know my DH is wanting it for his birthday meal in Sept. Trina

Last week, I baked meatloaf and homemade mac and cheese on the grill. Just 'cuz it's 110 in the kitchen doesn't stop DH and DS2 from wanting their comfort food! LOL Last night we had leftover spaghetti- the spaghetti squash was all gone so I had to cook pasta. Garlic bread was all gone, too, so I opened some leftover hotdog buns, buttered the insides, sprinkled them with garlic powder and herbs and toasted them in a skillet. 'Fraid I'm from the use-it-up-wear-it-out-make-it-do-do-without school of thought; and one look in my sewing room is testimony to that! LOL
I'm thinking we are going to try something new tonight- Jamacian Jerked Pork Medallions with grilled Pineapple. I need to get some sweet potatoes to roast and I will make black beans and rice. Now I just need a tall drink with an umbrella- Jimmy Buffet, here I come!
Wow Meg, you sure put your grill to use. I had no idea you could make so much on a grill!
Those pork medallions sound right up dh's alley. Would you post the recipe please.
Trina, do you make your own turkey burgers, or buy them made? How do you make them so they don't come out dry?
I ended up doing salmon with a chopped tomato salsa for dh last night. Made some hot dogs and fries for the little guy and I.
Tonight though, I am craving steak. So I will broil a steak and make baked potatoes to go with it. I wish we had some lettuce. I do have some fresh greens in the garden, so I'll do a salad with them too.
DH and I got caught up in another project the other day, and did not make the Jerk Pork Medallions until last night. I think before I try this again, I am going to go downtown to some of the specialty stores in the Eastern Market and see if I can find a milder jerk sauce. Our local grocery store only had one brand. It was so hot....
How hot was it? It was so hot I told DH that I was going to smear the Noxema I keep in the fridge for cooling sunburns all over my lips and mouth to cool them off.
DH also did sweet potatoes, which I had parboiled earlier, and bread on the grill. I steamed some fresh green beans and made black beans & rice on the stove.
Jamaican Jerk Pork Medallions with Grilled Pineapple
In a shallow, non-reactive container or large re-sealable plastic bag, place: 2 lbs pork tenderloins, cut into 3/4" thick medallions 1 C bottled jerk sauce, well shaken (or jerk paste thinned to taste with 1 C pineapple juice Marinate 2-3 hours, refrigerated, turning once. Pre-heat grill to medium high heat. Oil grate and grill pork medallions until slightly pink in the center,2-3 minutes per side. Let stand 5 minutes- prok will cintinue to cook as it stands. Meanwhile, grill until light grill marks appear on both side of 1 pineapple, peeled, cored, & cut into 1/2" slices. Serve pork gernished with grilled pineapple rings. 4-6 servings.
DH tried a new method for the sweet potatoes. Take parboiled potatoes (I used ones about the size of man's fist), cut them into wedges and brush lightly with oil. Grill. Remove from heat and sprinkle with either salt and pepper or cinnamon sugar.
Hi Dorian, I make my own turkey burgers. Though I don't know if/or how I keep them from getting dry. I know I bake them in the oven. I even cook beef hamburgers in the oven. (I don't like the top of my stove getting icky). Trina

Thanks Trina, the only turkey burgers I've had my MIL made and lets just say...she is NOT a good cooker. LOL. So I haven't ventured making them on my own, as I just don't want a dry burger. And turkey tends to dry out quickly.
Tonight I am going to make chicken nuggets. All the kids love them. We grew a small batch of colorful corn this year. The cobs were all different colors..red, blue, purple...so pretty. And we ground the corn into corn meal. It is sooo tasty. I bread my chicken nuggets with a half cornmeal and half flour spiced mixture. And they come out wonderful.
